Aunt Jemima Yellow Corn Meal
by Pepsico
Refined corn meal with synthetic vitamins added back after processing stripped away natural nutrients. While not harmful, it's nutritionally inferior to whole grain alternatives and processed in facilities that may introduce contaminants.
- Degerminated Yellow Corn Meal – controversial · Corn with the nutrient-rich germ removed, reducing fiber, healthy fats, and natural vitamins. Creates a more shelf-stable but nutritionally inferior product.
- Niacin – safe · Synthetic B vitamin added to replace nutrients lost during processing. Essential nutrient but synthetic form may not be as bioavailable as natural.
- Reduced Iron – safe · Iron fortification to replace minerals lost during degermination. Necessary addition but indicates original nutrients were stripped away.
- Thiamin Mononitrate – safe · Synthetic form of vitamin B1 added back after processing. Safe but demonstrates nutritional degradation of base ingredient.
- Riboflavin – safe · Vitamin B2 fortification to compensate for processing losses. Essential nutrient but synthetic replacement for naturally occurring vitamins.
- Folic Acid – safe · Synthetic form of folate added for fortification. Important nutrient but synthetic form may accumulate in body differently than natural folate.
